Thanksgiving Recipes Using Essential Oils–The Pumpkin Pie

What is Thanksgiving without the pumpkin pie?! How about a recipe that uses natural ingredients and no sugar? One that even the diabetics who come to your dinner table can have because the sweetener is Blue agave which has a low glycemic index.
First the crust:
- 1 1/4 c. whole wheat flour
- 3/4 c. rolled oats
- 1/4 c. Blue agave
- 1 tsp Stevia Extract
- 1/2 c. walnuts finely chopped
- 1/2 c. unsalted butter melted
Set the oven for 350. Then mix the flour, oats, blue agave, stevia snd walnuts together. Pour the melted butter in and mix until well blended. Press firmly into pie tins and bake for 15 minutes and set aside to cool.
Now for the filling:
- 4 eggs
- 1 can solid pumpkin (the 29 oz size)
- 1/2 tsp. nutmeg (a whole drop of nutmeg oil is too much!)
- 1 drop of ginger essential oil
- 1 tsp sea salt
- 1 recipe for Blue Agave Sweetened Condensed Milk (see recipe below)
- 2 drops of Cinnamon bark essential oil
Combine the eggs, pumpkin, salt and spices together in a bowl and mix well. Add the Blue Agave Sweetened condensed Milk to the rest of the filling mixture and blend well with a wire whisk. Pour into your prepared crusts and bake for 1 hr and 20 minutes or until a knife inserted comes out clean.
Recipe for the Blue Agave Sweetened condensed Milk
- 1 container of rice or goat milk (the 28 oz size)
- 2 Tbs. conrnstarch
- 1 c. blue agave
Reserve 1 cup of the milk. Combine the remaining milk and Blue agave in a saucepan and bring to a boil over medium heat. Add the cornstarch to the reserved cup of milk and blend. Slowly add to the boiling mixture and blend well with a wire whisk. Continue stirring until reduced to the consistency of sweetened condensed milk.
