			<content:encoded><![CDATA[<p>What is Thanksgiving without the pumpkin pie?! How about a recipe that uses natural ingredients and no sugar? One that even the diabetics who come to your dinner table can have because the sweetener is Blue agave which has a low glycemic index.</p>
<p><strong>First the crust:</strong></p>
<ul>
<li> 1 1/4 c. whole wheat flour</li>
<li>3/4 c. rolled oats</li>
<li>1/4 c. Blue agave</li>
<li>1 tsp Stevia Extract</li>
<li>1/2 c. walnuts finely chopped</li>
<li>1/2 c. unsalted butter melted</li>
</ul>
<p>Set the oven for 350. Then mix the flour, oats, blue agave, stevia snd walnuts together. Pour the melted butter in and mix until well blended. Press firmly into pie tins and bake for 15 minutes and set aside to cool.</p>
<p><strong>Now for the filling:</strong></p>
<ul>
<li> 4 eggs</li>
<li>1 can solid pumpkin (the 29 oz size)</li>
<li>1/2 tsp. nutmeg (a whole drop of nutmeg oil is too much!)</li>
<li>1 drop of ginger essential oil</li>
<li> 1 tsp sea salt</li>
<li>1 recipe for Blue Agave Sweetened Condensed Milk (see recipe below)</li>
<li>2 drops of Cinnamon bark essential oil</li>
</ul>
<p>Combine the eggs, pumpkin, salt and spices together in a bowl and mix well. Add the Blue Agave Sweetened condensed Milk to the rest of the filling mixture and blend well with a wire whisk. Pour into your prepared crusts and bake for 1 hr and 20 minutes or until a knife inserted comes out clean.</p>
<p><strong>Recipe for the Blue Agave Sweetened condensed Milk</strong></p>
<ul>
<li>1 container of rice or goat milk (the 28 oz size)</li>
<li>2 Tbs. conrnstarch</li>
<li>1 c. blue agave</li>
</ul>
<p>Reserve 1 cup of the milk. Combine the remaining milk and Blue agave in a saucepan and bring to a boil over medium heat. Add the cornstarch to the reserved cup of milk and blend. Slowly add to the boiling mixture and blend well with a wire whisk. Continue stirring until reduced to the consistency of sweetened condensed milk.</p>

Essential oils which are nature&#8217;s concentrated flavors can greatly enhance the taste of cranberries which tend to be on the tart side. In this recipe, let&#8217;s not use sugar but rather&#8211;Blue Agave which comes from the agave plant in Mexico. It is a natural sweetener with a low glycemic index making it good for diabetics as well.</p>
<p>Here are the ingredients:</p>
<ul>
<li> 3/4 cup water</li>
<li>1/2 cup Blue agave</li>
<li>12 ox package of cranberries</li>
<li>2 drops of orange essential oil</li>
</ul>
<p>Mix the water and agave together and bring to a boil. Then add the berries and return to a boil. Reduce the heat and gently boil for about 10-15 minutes until thickened. Remove from heat and let cool. When you are ready to refrigerate&#8211;only then add the 2 drops of orange essential oil and stir to mix well. You will be pleasantly surprised as the rich flavor those 2 drops will add to the cranberries and so will your guests.</p>

			<content:encoded><![CDATA[<p>This week&#8217;s blog posts will be on using essential oils for cooking thanksgiving dinner. The sweet pototoes are my favorite side dish. Instead of using frozen or canned sweet pototoes (bhah!) try baking some yams and use essential oils which are nature&#8217;s concentrated flavors for taste. Some might ask if these oils are edible? Absolutely and they are therapeutic as well.</p>
<p>You will be using nutmeg and cinnamon bark essential oils. Remember&#8211;these are concentrated, so you will only need one drop of each.</p>
<p>Set the oven for 350. I prefer to use yams rather than the paler sweet pototoes&#8211;they have more flavor than sweet pototoes. Peel them and cut them into chunks. Here are all the ingredients:</p>
<p>4 large yams</p>
<p>3/4 cup blue agave (much better than brown sugar)</p>
<p>1 drop of cinnamon bark oil</p>
<p>1 drop of nutmeg oil</p>
<p>2 Tbs. unsalted butter, melted</p>
<p>throw in some nuts if you are not allergic&#8211;walnuts are the best</p>
<p>Mix everything together and coat the yams&#8212;then bake for about 45 minutes or until the yams are nice and soft. I have done this recipe several times and love it&#8211;so do my guests.</p>
